100% destemmed. Sappy and cohesive, with compressed violets and crushed roses. Dark and chocolatey. Bastien Tardieu has likened this to Burgundy’s Chambolle-Musigny, which is a good comparison – darker perhaps but there is a real elegance here, along with fine tannins and a long, perfumed finish. Aged for 10 months in barrel, then six months in foudre.
