Guillaume d'Angerville partnered with his regisseur François Duvivier to search for the best vineyard sites in the Jura. After finding 3 unique sites in Arbois and in Montigny-les-Arsures, they created a state-of-the-art winery to make the wine from their 15 hectares of biodynamically farmed vines. The whole story began when Guillaume tasted blind, in a restaurant in Paris, a chardonnay from Jura that he found so good and identified as being from Burgundy. In Jura, savagnin is mostly used to produce vin jaune, an oxydative wine which has made Jura famous. Domaine du Pélican produced under 6,000 bottles and 300 magnums from the non-oxydative cuvée.
